Natural stone, solid hardwood, large format porcelain tile, anything with significant weight or structural rigidity needs a bond that cures hard and holds without give. Pressure sensitive adhesive is not engineered for that kind of load and will not perform reliably under it long term.
Temperature changes how long the adhesive takes to reach the right tack level. A cold slab slows things down. A hot room speeds them up. Site temperature on installation day changes everything. Too cold and the adhesive takes much longer to reach the working tack. Too warm and that window closes faster than expected. Checking conditions before starting is a small step that prevents a frustrating redo.
